Description
A bold and flavorful vegetarian dish featuring honey-roasted cauliflower, grilled halloumi, and crispy chickpeas—perfect as a hearty main or vibrant side.
Ingredients
1 medium cauliflower, cut into florets
1 can (15 oz) chickpeas, drained, rinsed, and dried
7 oz halloumi cheese, sliced into cubes
2 tbsp olive oil
1 tbsp honey
1 tsp curry powder
½ tsp smoked paprika
Salt and pepper to taste
Fresh herbs (parsley or cilantro), chopped
Optional: sliced almonds for garnish
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, toss cauliflower and chickpeas with olive oil, honey, curry powder, smoked paprika, salt, and pepper.
Spread mixture on baking sheet and roast for 25–30 minutes, stirring halfway through.
While roasting, grill halloumi cubes in a non-stick skillet for 2–3 minutes per side until golden.
Combine roasted veggies with grilled halloumi in a bowl.
Garnish with fresh herbs and optional sliced almonds.
Notes
Best enjoyed fresh but can be stored in the fridge for up to 2 days.
