Ingredients

1 lb chicken breast, cut into bite-sized pieces

8 oz cheese tortellini, fresh or frozen

1 cup cherry tomatoes, halved

2 cups baby spinach

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

Fresh basil (optional, for garnish)


Instructions

Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until browned and fully cooked (5–7 minutes).

Add garlic and cherry tomatoes, cooking for 2–3 minutes until tomatoes soften.

Pour in chicken broth and heavy cream, stirring to combine. Simmer gently.

Add tortellini and baby spinach, cooking until tortellini is tender (5–7 minutes).

Stir in Parmesan until melted and sauce is creamy.

Serve warm, garnished with fresh basil if desired.

Notes

For a lighter version, substitute half-and-half for heavy cream. Sun-dried tomatoes can be used instead of cherry tomatoes for a richer flavor.
