Description
Traditional sweet Mexican pancakes, also known as Gorditas de Azúcar, with a soft, thick texture and warm vanilla flavor.
Ingredients
– 2 cups flour
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 1/2 cup sugar
– 3/4 cup milk
– 2 tablespoons melted butter
– 1 teaspoon vanilla
Instructions
- – In a large mixing bowl, combine flour, baking powder, salt, and sugar. Mix well.
- – In another bowl, whisk together milk, melted butter, and vanilla.
- – Gradually add the wet ingredients to the dry, stirring until a thick batter forms.
- – Heat a non-stick skillet over medium heat and lightly grease it.
- – Pour 1/4 cup batter per pancake onto the skillet, forming thick circles.
- – Cook for 2–3 minutes until bubbles form and edges set. Flip and cook another 2–3 minutes until golden.
- – Remove and repeat with remaining batter.
- – Serve warm with cinnamon sugar, jam, or syrup.
Notes
Best enjoyed fresh. Customize with cinnamon, citrus zest, or mini chocolate chips.
