Description

Elote en vaso, or Mexican street corn in a cup, is a creamy, tangy, and savory snack that layers cooked corn with crema, mayo, cheese, chili powder, and lime. Perfect for quick bites or party appetizers.


Ingredients

“2 cups cooked corn (fresh or frozen)”,

“1/3 cup Mexican crema or sour cream”,

“1/4 cup mayonnaise”,

“1/4 cup crumbled cotija cheese”,

“1 tbsp lime juice”,

“1/2 tsp chili powder”,

“Salt to taste”,

“Fresh cilantro (optional)”,

“Lime wedge (for garnish)”


Instructions

  1. “Boil corn for 5–7 minutes if not already cooked, then drain well.”,
  2.     “In a bowl, mix crema (or sour cream), mayo, lime juice, and salt.”,
  3.     “Layer corn into cups, alternating with spoonfuls of the sauce.”,
  4.     “Finish with a layer of sauce, then sprinkle cotija cheese on top.”,
  5.     “Dust with chili powder, garnish with lime wedge and cilantro.”,
  6.     “Serve immediately warm or at room temperature.”
