Ingredients
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla extract
1/2 cup thick caramel sauce
Flaky sea salt (optional)
Caramel candy bits or crushed toffee pieces (optional garnish)
Instructions
Prepare the cookie dough by creaming butter and sugars, then mixing in egg and vanilla. Add dry ingredients and chill the dough.
Bake cookies at 350°F for 9-11 minutes. Cool completely.
Make the cheesecake filling by beating cream cheese, sugar, and vanilla.
Assemble by piping filling between two cookies.
Top with caramel sauce and optional garnishes.
Chill before serving.
