Ingredients
4 boneless, skinless chicken breasts
1 cup mushrooms, finely chopped
½ cup cream cheese, softened
½ cup shredded mozzarella cheese
3 tbsp butter
3 cloves garlic, minced
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper, to taste
¼ cup grated Parmesan cheese
Fresh parsley, for garnish
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Slice a pocket into each chicken breast without cutting all the way through.
In a bowl, mix mushrooms, cream cheese, mozzarella, garlic, thyme, parsley, salt, and pepper.
Stuff each chicken breast with the filling.
In a skillet, melt butter over medium heat and sear chicken for 3–4 minutes per side until golden.
Transfer to baking sheet, sprinkle Parmesan on top, and bake for 20–25 minutes until cooked through.
Garnish with parsley and serve hot.
Notes
For extra flavor, add fresh herbs like basil or oregano to the filling. Serve with mashed potatoes, roasted vegetables, or a crisp green salad for a complete meal.
