Description
Soft, fluffy mini pancake bites packed with cozy cinnamon-apple flavor and protein from cottage cheese. Made in the air fryer or oven for a quick breakfast or snack.
Ingredients
½ cup (120g) cottage cheese
1 egg
1 small apple, peeled and finely chopped
¼ cup oat flour (or almond flour)
½ teaspoon baking powder
½ teaspoon ground cinnamon
1–2 teaspoons maple syrup or honey (optional)
Pinch of salt
Instructions
Preheat oven to 350°F (175°C) or air fryer to 325°F (160°C).
In a bowl, whisk together cottage cheese and egg until smooth.
Stir in chopped apple, oat flour, baking powder, cinnamon, sweetener (if using), and salt.
Grease a mini muffin tin or silicone mold and fill each cavity about ¾ full.
Bake for 12–15 minutes or air fry for 8–10 minutes until golden and set.
Cool slightly before serving. Store leftovers in the fridge or freezer.
Notes
Add a sprinkle of nutmeg or chopped nuts for variety. Try using banana or pear instead of apple. Great for kids and perfect for meal prep.
