Zesty, herb-loaded Cowboy Butter perfect for steak, veggies, or bread. Quick to make and packed with flavor.
Ingredients
200 g unsalted butter, cubed and slightly softened
1/2 cup fresh parsley, finely chopped
1 tbsp fresh chives, finely sliced
1 tbsp Dijon mustard
2 tsp fresh thyme leaves
2 tsp prepared horseradish
2 garlic cloves, cores removed and crushed
1 tsp fresh lemon juice
1/2 tsp paprika
1/2 tsp fine cooking salt
Instructions
Cut a 30cm square of parchment paper and set aside.
In a bowl, combine all ingredients: butter, herbs, mustard, horseradish, garlic, lemon juice, paprika, and salt.
Use a potato masher to blend, then switch to a fork for a smoother consistency.
Shape the mixture into a rough log in the bowl.
Place the log near the bottom of the parchment and roll it up. Twist the ends to tighten.
Refrigerate until firm. Slice and use as needed.
Notes
Customize with cayenne for heat or lime juice for a tangy variation. Stores well in fridge for 1 week or frozen for longer.
