Crispy on the outside, fluffy on the inside, these Baked Garlic Parmesan Potato Wedges are a savory and satisfying side dish, perfect for any meal or gathering.
Ingredients
4 large russet potatoes, cut into wedges
3 tablespoons olive oil
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash and cut potatoes into wedges. Pat them dry with a paper towel.
In a large bowl, toss the wedges with olive oil, minced garlic, Parmesan, Italian seasoning, paprika, salt, and pepper.
Arrange potato wedges in a single layer on the baking sheet, skin-side down if possible.
Bake for 35 to 40 minutes, flipping halfway through, until golden brown and crispy.
Sprinkle with fresh parsley and extra Parmesan before serving.
Notes
For an extra crispy finish, soak potato wedges in cold water for 30 minutes, then pat dry before seasoning. Serve with garlic aioli or ranch for dipping.
