Description
Golden brown, cheesy, and irresistibly crunchy zucchini fritters that are perfect as a side or snack.
Ingredients
2 medium zucchinis, grated
1 teaspoon salt
½ cup all-purpose flour
¼ cup grated Parmesan cheese
1 egg, beaten
1 garlic clove, minced (optional)
¼ tsp black pepper
Oil for frying
Instructions
Place grated zucchini in a bowl, sprinkle with salt, and let sit for 10 minutes.
Squeeze out excess moisture using a clean towel or cheesecloth.
Combine zucchini with flour, Parmesan, egg, garlic, and black pepper. Mix well.
Heat oil in a skillet over medium heat.
Drop spoonfuls of batter into the pan and flatten gently.
Cook 2–3 minutes per side until golden brown.
Transfer to a paper towel-lined plate to drain.
Serve hot with a dipping sauce or yogurt.
Notes
For a gluten-free version, substitute the flour with a gluten-free blend.
