Description

Traditional German spice cookies flavored with warm spices, honey, and molasses, finished with a light sugar glaze.


Ingredients

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1/2 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup brown sugar

2 large eggs

1/2 cup honey

1/2 cup molasses

1 teaspoon vanilla extract

1/2 cup finely chopped almonds (optional)

1/2 cup candied orange peel, finely chopped (optional)

Glaze: 1 cup powdered sugar + 1–2 tablespoons water or lemon juice


Instructions

In a medium bowl, whisk together flour, baking soda, and spices. Set aside.

Cream butter and brown sugar until light and fluffy.

Add eggs one at a time, mixing well after each.

Stir in honey, molasses, and vanilla.

Gradually combine with dry mixture until incorporated.

Fold in almonds and orange peel if using.

Chill dough for at least 2 hours or overnight.

Preheat oven to 350°F (175°C) and line a baking sheet with parchment.

Scoop dough into tablespoons, flatten slightly on sheet.

Bake 10–12 minutes until set and lightly browned.

Mix powdered sugar with water or lemon juice to make glaze.

Brush glaze over warm cookies and let dry before serving.

Notes

For a deeper flavor, chill the dough overnight. Cookies keep well in an airtight container for up to a week.
