Description
Crisp cucumbers, juicy cherry tomatoes, red onions, and crumbled feta tossed with fresh basil and a simple lemon-olive oil dressing. A refreshing and quick salad perfect for summer meals.
Ingredients
2 cups cherry tomatoes, halved
1 large cucumber, chopped
¼ red onion, thinly sliced
⅓ cup crumbled feta cheese
Handful of fresh basil leaves
2 tbsp olive oil
1 tbsp lemon juice
Salt and black pepper, to taste
Optional: ½ tsp dried oregano or Italian seasoning
Instructions
Wash and chop the vegetables.
In a large bowl, combine tomatoes, cucumber, onion, feta, and basil.
Drizzle with olive oil and lemon juice.
Season with salt, pepper, and optional herbs.
Gently toss until evenly coated.
Let rest for 10–15 minutes before serving.
Notes
Best served fresh or within 1–2 days. Keep chilled in an airtight container.
