Description

Soft, fluffy muffins coated in buttery cinnamon sugar, just like Grandma’s homemade donuts.

Ingredients

– 1 ½ cups all-purpose flour

– ½ cup granulated sugar

– 1 ½ teaspoons ground cinnamon

– 1 teaspoon baking powder

– ½ teaspoon baking soda

– ½ teaspoon salt

– ¾ cup milk (or up to 1 cup if batter seems too thick)

– ⅓ cup unsalted butter, melted

– 1 large egg

– 1 teaspoon vanilla extract

– ¼ cup granulated sugar (for topping)

– 1 ½ teaspoons ground cinnamon (for topping)

– 2 tablespoons melted butter (for dipping)

Instructions

  1.  – Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2.   – Whisk flour, sugar, cinnamon, baking powder, baking soda, and salt in a large bowl.
  3.   – In another bowl, mix milk, melted butter, egg, and vanilla.
  4.   – Combine wet and dry ingredients. Add extra milk if batter is too thick.
  5.   – Fill muffin cups ¾ full and bake for 18–20 minutes until golden and a toothpick comes out clean.
  6.   – While warm, dip muffin tops in melted butter and roll in cinnamon sugar.

Notes
