Description

Healthy and protein-packed muffins made with Greek yogurt, peanut butter, apple chunks, and cinnamon. Naturally sweetened and perfect for snacks or breakfast.


Ingredients

½ cup Greek yogurt

½ cup peanut butter

¼ cup honey or maple syrup

1 egg

1 teaspoon vanilla extract

1 cup oat flour

½ teaspoon baking powder

1 teaspoon cinnamon

½ cup apple chunks (small pieces)


Instructions

Preheat your oven to 350°F (175°C) and line a muffin tin with 6 paper liners or lightly grease it.

In a mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, egg, and vanilla extract. Mix well until the ingredients are fully combined and the batter is smooth.

Add in the oat flour, baking powder, and cinnamon. Stir until everything is well incorporated.

Gently fold in the small apple chunks, distributing them evenly throughout the batter.

Spoon the batter evenly into the prepared muffin tin, filling each cup nearly to the top.

Bake in the preheated oven for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Store muffins in an airtight container for up to 5 days or freeze for up to 3 months. Use tart apples like Granny Smith for extra flavor contrast. Substitute almond butter if desired.
