Description
Indulge in tender bites of chicken and penne pasta tossed in a velvety garlic-Parmesan sauce with sun-dried tomatoes and herbs. A dish so delicious, it just might inspire a proposal!
Ingredients
1½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
10 oz penne pasta
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp Italian seasoning
3 cloves garlic, minced
½ cup sun-dried tomatoes (drained and chopped)
1 cup heavy cream
½ cup chicken broth
¾ cup grated Parmesan cheese
1 cup baby spinach (optional)
Fresh basil or parsley, for garnish
Instructions
Cook penne pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, garlic powder, and Italian seasoning. Cook until golden and cooked through, about 6–8 minutes. Remove and set aside.
In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1–2 minutes.
Pour in cream and chicken broth, stirring to combine. Simmer for 3–4 minutes.
Stir in Parmesan cheese until melted and smooth. Return chicken to pan and simmer for 2–3 minutes.
Add cooked pasta and spinach (if using). Toss until well coated.
Garnish with fresh basil or parsley and serve warm.
Notes
Use freshly grated Parmesan and consider a splash of white wine for more depth. Add red pepper flakes for heat.
