Description
Crispy on the outside, soft and savory on the inside, these mashed potato pancakes are filled with seasoned meat and pan-fried to perfection. A hearty twist on a comfort classic.
Ingredients
For the Mashed Potato Dough:
2 cups cold mashed potatoes
1 large egg
1/4 cup all-purpose flour
Salt & pepper to taste
For the Meat Filling:
1/2 lb ground beef or ground chicken
1 small onion, finely chopped
1 garlic clove, minced
Salt, pepper, and your favorite spices (paprika, cumin, etc.)
1 tbsp oil for cooking
For Pan-Frying:
2–3 tablespoons oil
Optional: chopped parsley for garnish
Instructions
Heat 1 tbsp oil in a skillet over medium heat. Sauté onion until soft, then add garlic and meat. Cook until browned and seasoned. Let cool.
Mix mashed potatoes, egg, flour, salt, and pepper in a bowl to form a soft dough.
Divide dough into 6–8 portions. Flatten each into a disc and fill with a spoonful of meat. Seal and shape into patties.
Heat 2–3 tbsp oil in a pan over medium heat. Cook pancakes 3–4 minutes per side until golden brown.
Garnish with parsley and serve with sour cream or yogurt dip if desired.
Notes
Keep hands floured when shaping to avoid stickiness. Try alternative fillings like mushrooms, cheese, or beans.
