Ingredients
– 1 pound ground beef
– 1 tsp Italian seasoning
– 4 cups beef broth
– 1 (14.5-ounce) can diced tomatoes, undrained
– 1 pound pasta (penne, rotini, or your favorite shape)
– 1/2 cup heavy cream
– 1/2 cup grated Parmesan cheese, plus more for serving
– 2 cups fresh spinach
– 3 cloves garlic, minced
– 1 tbsp olive oil
– Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Season with Italian seasoning, salt, and pepper.
2. Add garlic and cook for 1 minute. Stir in diced tomatoes with juice.
3. Pour in beef broth and add pasta. Bring to a boil, reduce heat, and simmer for 10-12 minutes until pasta is al dente.
4. Stir in heavy cream and Parmesan until sauce thickens.
5. Add spinach and cook for 1-2 minutes until wilted.
6. Serve warm with extra Parmesan.
Notes
Add a pinch of red pepper flakes for heat. Substitute ground turkey for a lighter option.
