Description
Quick and easy muffins with a perfectly cracked top, soft and fluffy inside, and a golden finish.
Ingredients
– 2 eggs
– 1 cup sugar
– 1 cup milk
– 1 cup vegetable oil
– 2½ cups all-purpose flour
– 2 tsp baking powder
– 1 tsp vanilla extract
– Pinch of salt
Instructions
1. Preheat oven to 180°C (350°F) and prepare muffin tin.
2. Beat eggs with sugar until fluffy.
3. Add milk, oil, and vanilla. Mix well.
4. Sift in flour, baking powder, and salt. Stir just until combined.
5. Rest batter for 10 minutes.
6. Fill molds ¾ full and bake for 20–25 minutes until golden and cracked on top.
Notes
Let batter rest before baking for the best muffin tops.
