Ingredients
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon granulated sugar
3/4 cup milk (adjust for desired consistency)
1 egg
1 tablespoon melted butter (plus more for greasing)
1/2 teaspoon vanilla extract (optional, for a sweet touch)
1 cup halal ground beef or chicken sausage (cooked and crumbled)
Maple syrup and butter, for serving
Instructions
Cook your halal sausage in a skillet over medium heat until fully browned. Drain excess fat and set aside.
In a mixing bowl, combine the flour, baking powder, salt, and sugar. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract. Gradually mix wet ingredients into the dry until smooth.
Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour a small amount of batter onto the skillet to form a circle. Add a spoonful of the cooked sausage to the center and cover with a bit more batter.
Cook for about 2–3 minutes or until bubbles form on the surface. Flip and cook another 2 minutes until golden brown and cooked through.
Stack ’em up and top with a pat of butter and a generous drizzle of maple syrup.
