Soft & Fruity Breakfast Cookies are naturally sweet, easy-to-make treats packed with bananas, oats, blueberries, and chocolate chips. Perfect for busy mornings or healthy snacking.
Ingredients
1 cup mashed ripe bananas (about 2 bananas)
1 1/2 cups rolled oats
1/3 cup chocolate chips
1/3 cup fresh blueberries
2 tbsp maple syrup or honey
1 tsp vanilla extract
1/4 tsp ground cinnamon
Pinch of salt
Instructions
Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
Mash bananas in a bowl, then mix in oats, chocolate chips, blueberries, maple syrup or honey, vanilla, cinnamon, and salt.
Drop spoonfuls of the mixture onto the tray and flatten slightly.
Bake for 12–15 minutes until edges are golden.
Cool on tray briefly before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Freezes well.
