Description

Old-fashioned ermine frosting, light and creamy with just the right sweetness. Ideal for cakes, cupcakes, or any dessert that needs a fluffy, cloud-like finish.


Ingredients

1 cup whole milk

5 tablespoons all-purpose flour

1 cup unsalted butter (room temperature)

1 cup granulated sugar

1 teaspoon vanilla extract (alcohol-free if preferred)


Instructions

In a small saucepan, whisk together the milk and flour until smooth. Cook over medium heat, stirring constantly, until thick like pudding. Remove from heat and cool completely.

In a large bowl, beat butter and sugar on high speed until pale and fluffy, about 4 to 5 minutes.

Gradually add the cooled milk-flour mixture to the creamed butter and sugar, beating until smooth.

Add vanilla extract and whip on high speed for 7 to 8 minutes, until the frosting is light and cloud-like.

Use immediately or refrigerate in an airtight container. Re-whip before using if chilled.

Notes

Ermine frosting is best enjoyed at room temperature. Avoid freezing. Great with red velvet and chocolate cakes.
